Easy and Healthy 5-Ingredient Potato Soup - €0.28 per bowl


I created this recipe out of necessity a few years ago. I was very, very poor, but needed something filling that tasted better than the microwavable soups found in Siwa. The cost of this soup may vary from shop to shop, but the price difference should be quite minimal, and the ingredients can be found in any shop.This recipe is also adjustable. The version pictured makes 8 to 10 bowls, but the written version makes 4 bowls, which is more suitable for a weeknight student dinner. My version is also vegan, but yours doesn't have to be.

Easy and Healthy 5-Ingredient Potato Soup - makes 4 bowls
(Note: The prices are based off of what I paid, having bought groceries in two seperate occasions this week.)
1 x onion, chopped - Onions €.90/kg in Lidl: €.15
2 x carrots, chopped - Carrots 1€/kg in Citymarket; €.20
2 x celery stalks, chopped - €1.75/bag in Lidl; €.40
4 x potatoes - €1/2kg in Citymarket; €.15
1 x stock cube mixed with 500ml water OR 500ml of stock(I used vegetable) - Fon Du Chef Vegetable €2/8 pieces in Citymarket:  €.25
Salt and pepper, to taste




Take all of the chopped ingredients and ad them to a soup pot over medium heat. Stir for about 2 minutes, then add the liquid. Bring to a boil, then turn the heat down a little and let simmer for 25 minutes, or until all of the vegetables are soft. Remove from the heat, and blend with an immersion blender(If you don't have an immersion blender, just skip this step!). Blend to your desired consistency. Add salt and pepper to taste. Serve on its own, or with a nice slice of buttered rye bread.

Possible additions:
If you're not on a budget, or you're in the mood to get fancy, consider adding one(or more!) of these ingredients to your finished bowl of soup:
Crumbled bacon
Chives
Sour Cream
Shredded cheddar cheese
