Broccoli-Apple Soup - 0.33€ per bowl



Last week, I bought a head of broccoli for 1€, and used half of it to make a lovely pasta dish. I was then left to decide what to do with the other half. I was a bit unsure, but then I got the latest K-Supermarket ad in the mail, and saw that apples were on sale.

"What do apples have to do with broccoli?" one may wonder

The answer to this question requires a little back story. When I lived in the US, my absolute favorite soup was cream of broccoli, with broccoli-cheddar following close behind. I loved the richness from the cream mixed in with the bold flavor of the broccoli. But, my diet changed quite a bit after coming to Finland, and while I still love soups like those, now I can't eat them without feeling guilty. Not to mention that good cheddar cheese isn't nearly as affordable as it is in the US.

So, one day a few years ago during Finnish apple season, I had a giant bag of freshly-picked apples, and a head of broccoli. It was a chilly day, so I thought "Why not soup?" And it was awesome. The sweetness from the apples mixes well with the broccoli, and a touch of garlic just brings everything together. And, when made with two potatoes, there's no need to add any cream.

Broccoli-Apple Soup - Makes 5 bowls at 0.33€/bowl. As usual, prices reflect those at K-Supermarket City in Pori.

1/2 head(about 200g) broccoli - 0.50€
1 apple(I used the Polish kind that were on sale) - 0.25€
1 onion - 0.10€
2 cloves garlic - 0.10€
2 potatoes - 0.20€
1 stock cube mixed in 750ml water OR 750ml vegetable stock- 0.50€
Salt
Pepper



Chop up everything and throw it into a soup pot. Add vegetable stock. Bring to a boil and then turn down the heat a little and let simmer for around 25 minutes. Remove the pot from the heat and blend with an immersion blender until desired texture is reached. Add salt and pepper to taste.

I know that this isn't the prettiest soup, but trust me about the flavor. I had mine with a grilled cheese sandwich, but it's fine on its own. Since I made the soup for Thursday's lunch, my boyfriend and I were able to make it last until Friday's lunch.
